Industrial Uses of Olives
While table olives (for direct consumption) are well-known, the primary industrial use of olives is for the production of olive oil. This process transforms the raw fruit into a valuable product with applications far beyond the kitchen.
The main industrial uses can be categorized as follows:
1. Olive Oil Production
This is the most significant industrial use. Specialized olive varieties (different from those best for table consumption) are cultivated and harvested specifically for oil extraction. The main grades of industrially produced olive oil include:
- Extra Virgin Olive Oil (EVOO): Used in food processing, gourmet cooking, dressings, and as a premium ingredient in health and cosmetic products.
- Refined Olive Oil: Used for frying, in large-scale food manufacturing (like canned goods and sauces), and in the catering industry due to its higher smoke point and neutral flavor.
- Lampante Oil: Low-quality oil not fit for consumption, which is historically used as fuel for oil lamps and is now primarily refined for other uses.
2. Non-Food Industrial Products
The byproducts of olive oil production (like pomace and wastewater) and lower-quality oils are also used industrially:
- Olive Pomace Oil: The paste leftover after the first press (pomace) still contains a small amount of oil. This is chemically extracted to create pomace oil, which is used for frying in the food industry and in some cosmetics.
- Cosmetics and Soap Making: Olive oil and its derivatives are key ingredients in soaps (most famously Castile soap), lotions, moisturizers, shampoos, and other skincare products due to their hydrating and antioxidant properties.
- Pharmaceuticals and Nutraceuticals: Olive oil is used as a base for some medications and supplements. Olive leaf extract, rich in oleuropein, is also sold as a health supplement.
- Biofuel: Research and development are ongoing to use olive pomace and lower-quality oils as a source for biodiesel and other biofuels.
- Animal Feed: The dried, leftover pomace from which the oil has been extracted can be used as a component in animal feed.
In summary, the main industrial use of olives is the large-scale crushing and pressing of olives to produce oil for culinary, cosmetic, and industrial purposes, alongside the utilization of the byproducts from this process.
